Just a little Photo-Ode to probably what is one of the greatest “comidas típicas” (traditional foods) of the Americas, namely the highland regions of Ecuador —
“El llapingacho:” Fried mashed potato pancakes stuffed with cheese (Se me hace agua la boca!!! It makes my mouth water!!!)
A typical plate of Llapingacho is usually served with:
- Chorizo o salchicha (pork sausage)
- Fritada de chancho (fried pork)
- Ensalada de lechuga y remolacha (salad of lettuce and beets)
- Arroz blanco (white rice)
- Huevo frito (fried egg)
- Aguacate (avocado)
- And of course, you can’t forget to add “el ají” (house salsa made from different chiles)
And you can get all that amazing deliciousness on any given day for about $2.50…Que bestia!
